Winemaker

The Déthunes started as growers in the early 1800s and began to make their own Champagne in the 1930s. The vineyards are planted in the ratio of 70% Pinot Noir to 30% Chardonnay and are farmed on organic principles – and hold the highest level HEV (High Environmental Value) certificate for sustainable viticulture. This immaculate 7-hectare domaine goes from strength to strength. Pierre and Sophie Déthune, along with their daughter Emma (who is training under the expert supervision of Pierre), are friends of the Fournys and this Ambonnay domaine is amongst the loveliest and best cared for in the whole of Champagne.

Appearance:
The Paul Déthune Blanc de Noirs Grand Cru Brut pours with a brilliant, golden hue that glimmers in the glass. Its fine, persistent bubbles rise gracefully, forming a delicate mousse that promises a luxurious experience.

Nose:
On the nose, this Champagne is immediately captivating with its complex bouquet. Initial aromas of ripe red fruits, such as cherries and raspberries, intermingle with notes of baked apple and pear. As it opens up, subtle hints of brioche, toasted almonds, and a touch of honey emerge, adding layers of richness. There is also a faint minerality, reminiscent of wet stones, which speaks to the terroir of the Montagne de Reims.

Palate:
The first sip reveals a beautifully balanced wine, where the richness of the Pinot Noir is showcased without overshadowing its finesse. Flavours of red fruits continue on the palate, with strawberry and blackcurrant taking centre stage. These fruit notes are complemented by a creamy texture, indicative of extended aging on the lees. The mid-palate reveals layers of complexity, including nuances of vanilla, toffee, and a hint of spice.

Finish:
The finish is long and satisfying, with a crisp acidity that refreshes the palate and leaves a lingering impression of citrus zest and minerality. There is a pleasant, slightly saline note that adds to its overall elegance and invites another sip.

Food Pairing:
This Blanc de Noirs Grand Cru Brut is versatile enough to pair with a variety of dishes. Its robust character makes it an excellent companion to rich seafood like lobster or scallops, as well as roasted poultry and game birds. For a vegetarian option, consider pairing it with mushroom risotto or aged cheeses like Comté or Gruyère.
